But the real question is why this doesn't come with the $700 smoker already, given that it's sold by *the same company*

Anyway. Now we can have veggies and meat in there are the same time. Also drumsticks. That's a vegetable, right?

Oh geez... even new bee smokers might have a problem.

Australian safety alert (2022)!!

"This safety alert provides information about asbestos in components of imported Bee Smokers (also known as smokepots). The risk is not limited to a single manufacturer or brand.... The Heads of Workplace Safety Authorities previously issued a national safety alert for asbestos detected in the insulation component of imported battery-powered electric bee smokers. Chrysotile asbestos has also been detected in the bellows of some manual bee smokers at the border, imported from China."

A new instance, a new #introduction.

Professionally, I am a PMP-certified (and formerly CSM-certified) #it project, portfolio, and operations leader who is starting the process of shifting gears into #infosec. My main interest is #grc as I have been involved with internal and consultant policy engagements, multi-silo IT governance, and project/portfolio/department risk assessments.

Personally, I enjoy #photography, am a recovering #mechanicalkeyboard nerd, partake in the occasional #bbq and #smoker session, view lots of things #scifi related, and enjoying various forms of #music in addition to pursuing interests in my bio.

Lastly, I think it important to mention that I have a very bad relationship with organized spirituality entities. I will immediately block any user I see in my feed who discusses their faith in a way that annoys me or makes me feel uncomfortable, and I might even engage any Scientology knobs I encounter. I realize your faith and devotion is strong, please respect my desire to avoid it.

Got up at 4:50AM to start the smoker. I’m cooking a ~7.5 pound beef brisket (flat) on my Kamado Joe Classic III.

The brisket was coated with yellow mustard and seasoned with a mixture of salt/pepper/garlic powder (1:1:0.5 ratio; 5 tbsp, 5 tbsp, ~2.5 tbsp). Refrigerated overnight (6 hours).

I’m targeting 250F today, using a mix of oak and hickory wood chunks. Hopefully it will be done in a little under 12 hours.
