I run ejabberd, too, and I'm Happy with it.

For Android I can recommend Conversations, it's for free in F-Droid.
OMEMO encryption, VideoCalls, ... everything just works.

I didn't try iOS, but there are Clients, too.
On Linux I use Dino.
